 Paratha is a delicious and versatile Indian flatbread that's perfect for breakfast or any meal of the day. There are many variations of paratha, from plain to stuffed with various fillings. Here’s a basic recipe for making plain paratha, as well as a simple stuffed version with potatoes.


### Basic Paratha Recipe


#### Ingredients:

- **2 cups whole wheat flour**

- **1/2 teaspoon salt**

- **2 tablespoons oil or ghee** (for the dough)

- **Water**, as needed

- **Additional flour**, for rolling


#### Instructions:


1. **Prepare the Dough:**

   - In a large bowl, mix the whole wheat flour and salt.

   - Add the oil or ghee and rub it into the flour using your fingers until the mixture resembles coarse crumbs.

   - Gradually add water, a little at a time, and knead to form a smooth, soft dough. The dough should be slightly softer than bread dough but not sticky.

   - Cover the dough with a damp cloth and let it rest for about 20-30 minutes.


2. **Roll Out the Parathas:**

   - Divide the dough into equal-sized balls.

   - On a floured surface, roll out each ball into a thin circle (about 6-8 inches in diameter).

   - Heat a tava (griddle) or non-stick skillet over medium heat.


3. **Cook the Paratha:**

   - Place the rolled dough onto the hot tava. Cook for about 1 minute, or until you see bubbles forming on the surface.

   - Flip the paratha and cook the other side for about 30 seconds.

   - Apply a little oil or ghee on the top side and flip again. Press gently with a spatula and cook until golden brown and crispy. 

   - Remove from the tava and keep warm in a covered container or cloth.


4. **Serve:**

   - Serve hot with yogurt, pickles, or curry.


### Stuffed Aloo Paratha Recipe


#### For the Filling:

- **2 large potatoes**, boiled and mashed

- **1 small onion**, finely chopped

- **2 green chilies**, finely chopped (optional)

- **1 tablespoon fresh coriander leaves**, chopped

- **1/2 teaspoon cumin seeds**

- **1/2 teaspoon garam masala**

- **1/2 teaspoon red chili powder**

- **1/2 teaspoon turmeric powder**

- **Salt**, to taste


#### Instructions:


1. **Prepare the Filling:**

   - Heat a little oil in a pan over medium heat. Add cumin seeds and let them splutter.

   - Add the chopped onions and green chilies. Sauté until the onions are golden brown.

   - Add the mashed potatoes and all the spices. Mix well and cook for a few minutes until the filling is well combined and slightly dry.

   - Stir in the fresh coriander leaves. Remove from heat and let it cool.


2. **Stuff the Parathas:**

   - Divide the dough and filling into equal portions.

   - Roll out one dough ball into a small circle (about 4-5 inches in diameter). Place a portion of the potato filling in the center.

   - Gently fold the edges of the dough over the filling to seal it, forming a ball again.

   - Roll out the stuffed dough ball carefully into a larger circle, about 8-10 inches in diameter. Be gentle to avoid the filling from spilling out.


3. **Cook the Stuffed Paratha:**

   - Heat the tava or skillet over medium heat.

   - Place the rolled stuffed paratha onto the hot tava. Cook for about 1 minute or until you see bubbles forming.

   - Flip and cook the other side for 30 seconds. Apply a little oil or ghee on top and flip again, pressing gently. Cook until golden brown and crispy.


4. **Serve:**

   - Serve hot with yogurt, pickles, or a curry of your choice.
