Kotthu (or Kothu) is a popular Sri Lankan dish that’s often made with roti, vegetables, and sometimes meat. It’s a flavorful, street-food style dish known for its spicy, savory, and satisfying qualities. Here’s a basic recipe for making Kotthu Roti at home.
### Kotthu Roti Recipe
#### Ingredients:
- **4-6 roti or parathas** (preferably leftover or slightly stale)
- **2 tablespoons vegetable oil**
- **1 large onion**, finely chopped
- **2-3 green chilies**, sliced (adjust to taste)
- **2 cloves garlic**, minced
- **1 tablespoon ginger**, minced
- **1-2 tomatoes**, chopped
- **1 cup mixed vegetables** (carrots, bell peppers, beans, etc.), diced
- **1 cup cooked chicken**, beef, or lamb (optional, chopped into small pieces)
- **2-3 eggs**, lightly beaten
- **2 tablespoons soy sauce**
- **2 tablespoons Sri Lankan curry powder** (or any curry powder you like)
- **1 teaspoon turmeric powder**
- **1 teaspoon chili powder** (adjust to taste)
- **Salt**, to taste
- **Fresh cilantro**, chopped (for garnish)
- **Lemon wedges** (for serving)
#### Instructions:
1. **Prepare the Roti:**
- If using fresh roti, toast them lightly in a dry skillet or oven until they become slightly crispy. If you’re using leftover or stale roti, cut them into small strips or bite-sized pieces.
2. **Cook the Base:**
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add the chopped onions and green chilies. Sauté until the onions become translucent.
- Add the minced garlic and ginger, and cook for another minute until fragrant.
- Add the chopped tomatoes and cook until they break down and blend into the mixture.
3. **Add Vegetables and Meat:**
- Add the diced mixed vegetables and cook for a few minutes until they begin to soften.
- If using cooked meat, add it now and mix well.
4. **Add Spices and Sauces:**
- Stir in the curry powder, turmeric powder, chili powder, and salt. Cook for a couple of minutes to let the spices release their flavors.
- Add the soy sauce and mix thoroughly.
5. **Combine with Roti:**
- Add the chopped roti pieces to the skillet. Stir well to combine all the ingredients and ensure the roti pieces are coated with the spices and vegetables.
- Press down with a spatula and cook for a few minutes, stirring occasionally, to let the roti pieces absorb the flavors and become slightly crispy.
6. **Add Eggs:**
- Push the mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through, then mix them into the roti and vegetable mixture.
7. **Serve:**
- Garnish with chopped fresh cilantro.
- Serve hot with lemon wedges on the side for a fresh burst of flavor.
